Consumers are becoming increasingly interested in plant-based alternatives, with vegan pizza in particular having a 119% growth over the years and vegan cheese growing in popularity by over 150% since 2018.

"In an education setting, Italian cuisine can be a simple way to offer nutritional benefits to students, whether that's including more vegetables within a pasta recipe or even offering a side salad alongside vegetarian pizza slice.

As healthy ingredients are already staples inn Italian cooking, university caterers can easily increase the nutrition in dishes with additional vegetables for a boost of extra goodness.

Authentic Italian pizza and pasta are not typically loaded with cheese like their American counterparts, so it's OK for university caterers to be modest with dairy in their offer - or lose it altogether.
