University of Nottingham held the inaugural TUCO Flavours event on 27 - 28 November 2025; offering a two-day experience for chefs and catering teams in higher and further education to explore global cuisines.

On the evening of 27 November delegates gathered for a vibrant food festival celebrating global cuisines. The relaxed atmosphere offered networking and introductions to the chefs who would demonstrate their skills the following day. A cheese pairing competition invited participants to get involved and enjoy the energy of the event.

The main conference day on 28 November, hosted by television presenter Kate Quilton, featured an array of culinary demonstrations:

  • Punjabi Indian-inspired dishes by Dipna Anand
  • West African flavours from vegan chef Duchess Nena
  • Global cuisine concepts from the event’s headline sponsor Brakes
  • Culinary innovators The Beefy Boys, sharing recipes, techniques, and menu ideas. 

Between demonstrations, attendees were able to join breakout sessions on sustainable cooking (led by Jenny Chandler), olive-oil tasting masterclasses, and a food photography workshop to expand skills in presentation and menu planning. A panel discussion featuring university chefs of global heritage also took place, exploring how international cuisines contribute to inclusive, diverse catering menus across UK campuses.

Throughout the day, a supplier exhibition allowed delegates to explore the latest products, innovations and resources from leading foodservice suppliers. Many took away ideas and inspirations to bring back to their own catering kitchens.
